Hi Everyone. As you know I love to cook and breakfast is my favorite meal so I'm constantly trying to come up with new and innovative breakfast ideas. The recipe below is one that I came up with and is one of my husbands favorite so I want to share it with you.
Pasta Scramble
2 Cups Leftover Spaghetti Pasta Noodles
3 eggs
2 Tbsp cream
1/4 of an onion, finely chopped
1 jalapeno chili pepper, finely chopped w/o seeds
1 serrano chili pepper, finely chopped w/o seeds
1 small red pepper, finely chopped w/o seeds
1 Tbsp chopped Cilantro
1/4 Cup Feta Cheese, crumbled
1/4 Cup Parmesan Cheese, grated
1/8 tsp Italian Seasoning
1/4 tsp Salt
Salt to taste
2 Tbsp Butter
In a skillet add 2 Tbsp Olive Oil over medium heat, add in the onion, chili peppers, red pepper; cook until lightly brown. Add in the precooked pasta; continue cooking until pasta is lightly browning. In a large bowl add the 3 eggs, cream, cilantro, feta cheese, Parmesan cheese, Italian seasoning, salt and pepper; whisk together. Add butter to the center of the pasta then add egg ingredients and cook egg mixture through on low heat trying not to overcook the eggs. Stir gently. Serve with bread that has been topped with grated mozzarella cheese and sprinkled with Italian seasoning and placed under a broiler until cheese bubbles and turns brown. Variations are endless.
Design ideas to help create your oasis at home
Welcome to my blog where you can hopefully be inspired
The design ideas in this blog are for you to get inspired to help make your home a place that will be warm and cozy. I'm not a minimalist and love to be surrounded by beautiful things that did not cost a lot of money. My husband and I went to garage sales for 7 years until we couldn't bring anything else home because it wouldn't fit. I use to take people with me to the garage sales by their request because they wanted to learn how I found so many lovely things. It was a great adventure for them and they learned how to get in and get out fast. So I hope I will be able to help you too find things that look like you spent a bundle when in reality you got it for a song.....

Breakfast Ideas
Good Morning. Today I will share with you one of our favorite breakfast meals. One of my favorite cuisines is Mexican Food so of course there has to be Mexican-style food for breakfast. This is an easy recipe and hopefully become one of your favorites too.
Breakfast Tacos
4 corn tortillas
3 eggs
1/4 cup cheddar/jack grated cheese
1/4 cup drained Ortega green diced chilies
1 small finely chopped green onion
1/4 tsp Cumin
Dash Cayenne Pepper
Salt & Pepper
Butter (real)
Lightly butter one side of each corn tortillas and place them butter side down in a large pan over medium heat. When they begin to lightly brown fold each in half butter side down. Lower heat to low and continue cooking, flipping once or twice until golden brown. While browning start cooking the egg mixture below.
In a bowl whisk together eggs, cheese, diced chilies, green onion, cumin, cayenne pepper, salt and pepper. In a non-stick skillet over medium heat add 2 Tbsp unsalted real butter, heat until melted; add egg mixture, stir lightly continuously until eggs are cooked through but not browned or hard.
Place 1/4 of egg mixture into each of the corn tortillas and serve. You can make as many of these as your family will eat. Cook the tortillas to whatever crispness you prefer....I like them crunchy. If you really like it spicy in the morning use your favorite salsa.

Breakfast Ideas
In my Blog I would like to share some recipes with you. I love to cook and have created some pretty good recipes over the years. In this post I want to share a recipe for breakfast which is my favorite meal of the day. I have always eaten breakfast so creating different menus is essential to keeping it from getting boring. I know this is a design blog but who doesn't like to share recipes.....and eat?
This is one of my original breakfast ideas that came about over 30 years ago:
Spaghetti Omelet
1 1/2 cups leftover spaghetti with meat sauce (combined)
3 eggs
1/2 cup grated sharp cheddar cheese
1/4 cup mozzarella cheese
2 Tbsp grated Parmesan cheese (the good stuff)
Salt and Pepper
In a bowl beat eggs with a sprinkle of water, 1/4 tsp salt, 1/8 tsp pepper. In a non-stick skillet over medium heat add 1 Tbsp butter. Pour in egg mixture and with a spatula bring in from the side allowing the uncooked egg mixture to flow onto the pan surface. Make sure your heat is not too high you do not want to burn your eggs. Place a lid on the pan and allow for the egg mixture to begin to cook through. Heat your leftover spaghetti (microwave or stove top). Place the spaghetti mixture on one half of the omelet, sprinkle the 3 cheeses over the spaghetti portion; fold over the other half. Lower the heat to the lowest setting cover with lid and let heat for a few minutes until the cheese has melted. Serve with sourdough toasted bread or toasted bagel. Serves 2 hungry people.
I will be adding recipes to this section, so please come back and check them out.
